slow cooker pot roast with onions
Found this recipe out of my local newspaper and it smells so good even when it's just cooking mmmmm :)

Ingredients
- 2 1/2 pounds boneless beef sirloin tip or chuck roast
- 1 tablespoon horseradish
- 1 1/2 pounds yellow onions, trimmed & cut into 1/2 inch slices
- 1 pound red potatoes, trimmed & halved
- 1/2 pound carrots, trimmed, peeled & cut into 2-3 inch pieces
- 2 tablespoons fresh thyme leaves, stripped from stems
- 1 tablespoon chopped fresh rosemary, removed from stem
- 2 cups tomato juice
- 1 cup low-sodium beef broth
- 1/2 cup red wine
- 2 tablespoons flour
How To Make slow cooker pot roast with onions

Step 1Trim fat from beef roast. Place roast in bottom of 5-6 quart slow cooker. Spread horseradish over the meat. Top and surround roast with onions, potatoes & carrots.

Step 2Sprinkle with Thyme & Rosemary and pour in tomato juice & beef broth. Cover & cook on High for 6 to 8 hours or until beef is fall apart tender.

Step 3Mix wine with flour and pour mixture around meat in slow cooker. Gently stir flour mixture into existing sauce without disturbing the meat.

Step 4Replace cover and cook on High for 15 mins or until thickened. Before serving, season with salt & pepper to taste and garnish with sprigs of rosemary.
