This Pot Roast is delicious. Beef is tender and will melt-in-your-mouth. My families comfort food that keeps everyone coming back for more.

Ingredients

  • 1/4 cup cornstarch
  • 1 cup dry red wine
  • 1 cup beef bouillon or broth
  • 2 tablespoons worcestershire sauce
  • 1 teaspoon onion powder
  • 12 small new potatoes, quartered
  • 2 tablespoons rosemary
  • 1 tablespoon garlic, minced or paste
  • 1 1/2-2 pounds beef round roast
  • 4 ounces seasoned tomato paste
  • 2 cups baby carrots

How To Make slow cooker pot roast

  • Step 1
    In 6 quart slow cooker, place beef, seasoned with 1/2 tsp both salt and pepper.
  • Step 2
    Mix together with whisk cornstarch, dry red wine, tomato paste, beef broth w/seasonings.
  • Step 3
    Place cut-up veggies in the mixture to coat veggies. Then put them over beef already in the crockpot.
  • Step 4
    Cover crockpot and cook until beef is fork tender, 7-8 hours on Low setting or 6-7 hours on High setting.
  • Step 5
    Place beef on cutting board and thinly slice. Put beef back in with veggies, mix beef with veggies and serve.
