I made this dish for Sunday brunch, and it was a great hit. The base represents a traditional Korean beef, with a few changes made by yours truly. So, I cannot say that it is a “traditional” Korean beef, but it is close. Since it is a slow cooker dish, it takes a bit of time; however, it comes together quickly, and then all you have to do is wait. And, trust me, it is worth the wait. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 2 - 3 pounds beef chuck roast, cut into 1-inch cubes
  • SAUCE INGREDIENTS
  • 1 cup beef broth
  • 1/2 cup brown sugar, packed
  • 1/2 cup Tamari sauce, or liquid aminos
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon rice wine vinegar
  • 2 teaspoons ginger powder
  • 1 teaspoon Sriracha, or more, to taste
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon white pepper
  • 3 - 4 cloves garlic, minced
  • THE SLURRY
  • 3 tablespoons corn starch or arrowroot powder
  • 1/4 cup water or beef stock
  • ADDITIONAL ITEMS
  • 1/2 medium head of cabbage, sliced
  • sesame seeds, for garnish

How To Make slow cooker essentials: korean beef

  • Step 1
    PREP/PREPARE
  • Step 2
    Gather your Ingredients (mise en place).
  • Step 3
    Cut the roast up into 1-inch cubes.
  • Step 4
    Whisk together all of the sauce ingredients in a small mixing bowl.
  • Step 5
    Add the roast into the slow cooker, and then mix in the sauce.
  • Step 6
    Set the slow cooker on low, and allow it to cook for six hours.
  • Step 7
    At the end of the sixth hour, whisk the water or broth together with the corn starch or stock, and add to the slow cooker.
  • Step 8
    Then stir in the sliced cabbage.
  • Step 9
    Set the slow cooker to high and cook for an additional 30 – 45 minutes, or until the sauce thickens.
