slow cooker essentials: korean beef
I made this dish for Sunday brunch, and it was a great hit. The base represents a traditional Korean beef, with a few changes made by yours truly. So, I cannot say that it is a “traditional” Korean beef, but it is close. Since it is a slow cooker dish, it takes a bit of time; however, it comes together quickly, and then all you have to do is wait. And, trust me, it is worth the wait. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 2 - 3 pounds beef chuck roast, cut into 1-inch cubes
- SAUCE INGREDIENTS
- 1 cup beef broth
- 1/2 cup brown sugar, packed
- 1/2 cup Tamari sauce, or liquid aminos
- 1 tablespoon toasted sesame oil
- 1 tablespoon rice wine vinegar
- 2 teaspoons ginger powder
- 1 teaspoon Sriracha, or more, to taste
- 1/2 teaspoon onion powder
- 1/2 teaspoon white pepper
- 3 - 4 cloves garlic, minced
- THE SLURRY
- 3 tablespoons corn starch or arrowroot powder
- 1/4 cup water or beef stock
- ADDITIONAL ITEMS
- 1/2 medium head of cabbage, sliced
- sesame seeds, for garnish

Step 1PREP/PREPARE

Step 2Gather your Ingredients (mise en place).

Step 3Cut the roast up into 1-inch cubes.

Step 4Whisk together all of the sauce ingredients in a small mixing bowl.

Step 5Add the roast into the slow cooker, and then mix in the sauce.

Step 6Set the slow cooker on low, and allow it to cook for six hours.

Step 7At the end of the sixth hour, whisk the water or broth together with the corn starch or stock, and add to the slow cooker.

Step 8Then stir in the sliced cabbage.

Step 9Set the slow cooker to high and cook for an additional 30 – 45 minutes, or until the sauce thickens.

Step 11Serve over rice and sprinkle with some sesame seeds. Enjoy.
