I love Autumn… days get shorter, temps get cooler, and leaves fall like multi-colored rain, carpeting my lawn in shades of yellow, brown, red, and orange. This is also the time of year when I get visits from family that I haven’t seen since last Autumn. I’m always experimenting with new ways to make meals… Some work, while others do not. This one works. Yummy top round slow cooked with broth, and then lovingly placed on a bed of white rice, and drizzled with an amazing Asian-inspired sauce. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • THE TOP ROUND
  • 2 pounds top round roast, thinly sliced against the grain
  • 1/2 medium yellow onion, thinly sliced
  • 1 cup beef stock, not broth
  • 1 tablespoon worcestershire sauce
  • THE SAUCE
  • 1/4 cup broth from the slow cooker
  • 1/2 cup coconut sugar
  • 1/2 cup tamari sauce
  • 2 teaspoons ginger, freshly grated (or 1 teaspoon ginger powder)
  • 2 cloves garlic, minced
  • 2 tablespoons sesame oil
  • ADDITIONAL ITEMS
  • - long-grain white rice for serving
  • - sesame seeds, for garnish
  • - green onions, chopped, for garnish

    PREP/PREPARE

    THE TOP ROUND
  • Step 3
    Gather your ingredients. (mise en place).
  • Step 4
    Add the onions to the bottom of the slow cooker, and then add the sliced beef.
  • Step 5
    Mix the beef stock with the Worcestershire, and pour over the beef.
  • Step 6
    Cook on high setting for 2.5 to 3 hours, or low setting for 4 to 5 hours.

    Chef’s Tip: Go sit down and read a book, or take a nap.

    THE SAUCE

    Gather your ingredients.
  • Step 10
    Place all of the ingredients; including 1/4 cup of broth from the slow cooker, into a saucepan.

    Bring the liquid to a simmer, and continue simmering for about 10 minutes.

    Place some nice steamy rice in a bowl, add a few slices of yummy beef, and drizzle with the sauce. Add some sesame seeds, and green onions on top for a garnish. Enjoy.
