Ingredients
- 1 - 2-2/12 lb boneless beef chuck pot roast
- 3 teaspoons cajun seasonings
- 1 tablespoon olive oil
- 1 - 14-1/2 oz can mexican-style stewed tomatoes, undrained
- 1 cup chopped onion
- 1 cup chopped celery
- 1/4 cup quick-cooking tapioca
- 1 teaspoon minced garlic
- - hot cooked rice
How To Make slow-cooker cajun pot roast

Step 1Trim any fat from roast and cut to fit cooker. Rub cajun seasoning all over meat.

Step 2Add oil to lg skillet, place over medium heat. Brown meat on all sides.

Step 3In a 4-quart slow-cooker, combine tomatoes, onion, celery, tapioca, and garlic. Place raost meat on top of veggies. Cover, cook on low for 10 hrs, or on high for 6 hrs. Slice meat and serve over hot cooked rice.
