slow cooker beef stew
I have been making this stew for 25 years. I have tried many recipes, but this is my very favorite. Toss the ingredients together in the morning and coming home to the aroma of comfort food. It goes so well with fresh French bread and a green salad. (The photo featured is the dish PRIOR to cooking. We ate the finished result before I had a chance to take a picture!)

Ingredients
- 1 1/2 pounds beef stew meat
- 1 medium onion, chopped
- 4 large carrots, peeled and cut into 1 inch pieces
- 2 - ribs celery, cut into 1 inch pieces
- 4 medium potatoes, peeled
- 1 can tomatoes, diced and undrained
- 1 can beef broth, 10 1/2 ounces
- 1 tablespoon worcestershire sauce
- 1 tablespoon parsley flakes
- 1 teaspoon thyme leaves
- 1 large bay leaf
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons tapioca
How To Make slow cooker beef stew

Step 1Brown beef cubes in skillet over medium heat. Transfer meat into crockpot.

Step 2Add remaining ingredients. Cover and cook on low for 4-5 8 hours or on low for 4-5 hours.

Step 3If you'd like a thicker stew, add a tablespoon or two of cornstarch mixed in a small amount (about 1/4 cup) of water and add to stew about 15 minutes prior to serving. This should thicken it.
