I love this hearty barley dish. I haven't tried this with pork yet but considering the price of beef these days...it's something I plan to try.

Ingredients

  • 2 lb
    stew meat
  • 1 lb
    mushrooms
  • 1
    onion
  • 2 Tbsp
    oil
  • 1 1/2 tsp
    salt
  • 1/2 tsp
    black pepper
  • 2 c
    beef broth
  • 1/4 c
    lemon juice
  • 3/4 c
    pearl barley
  • 1/3 c
    fresh parsley
  • 1 1/2 c
    water

How to Make SLOW COOKER BEEF AND BARLEY

Step-by-Step

  1. Brown meat and onion in oil
    add Mushrooms and cook 3 min
    Remove to crock pot and add salt and pepper
  2. add water, broth and lemon juice to pan drippings and boil

    Stir in barley and parsley
  3. Pour over meat and cook till meat is tender and barley cooked.
