Ingredients
- 6 large russet potatoes scrubed
- 1 medium onion diced
- 4 cloves garlic minced
- 1 pound ground beef
- 1 cup ketchup
- 1/3 cup brown sugar
- 2 tablespoons dijon mustard
- 1 tablespoon worcestershire sauce
- salt and pepper
- 1 cup shredded cheddar cheese
- fresh chives for garnish
How To Make sloppy joe potato skins

Step 1Preheat oven 400 degrees. Prick the potatoes and bake for 1 hour or until done. Let them cool.

Step 2Meanwhile Add some oil to a large skillet. Add the onion and garlic and cook 1 minute. Add the burger and cook until no longer pink.

Step 3Add the ketchup, brown sugar, mustard, Worcestershire sauce and salt and pepper. Cook until warmed through. Cut the potatoes in half and scoop out the potatoes leaving about 1/4 inch border.

Step 4Fill each of the potato skins with the beef mixture. Top with cheese and green onions. Serve with sour cream if desired.
