My mom used to make this and I have no idea where she got the recipe. Its a good, quick supper, and economical, too. Mom was able to make a pound of hamburger serve 6 in so many ways. NOTE: Picture shows this recipe before adding cheese topping.

Ingredients For sloppy joe cornbread

  • 1 pkg
    (8 1/2 ounces) cornbread mix, like jiffy
  • 1/3 c
    milk
  • 1 lg
    egg, beaten
  • 1 lb
    lean ground beef
  • 1/2 md
    onion, chopped
  • 1 can
    (6 ounces) tomato paste
  • 1 pkg
    sloppy joe seasoning mix
  • 1 can
    kidney beans, drained
  • 1 1/4 c
    water
  • salt and pepper to taste
  • 1 pkg
    (8 ounces) shredded cheddar cheese

How To Make sloppy joe cornbread

    Preheat oven to 350 degrees. Grease bottom only of a 9 by 13 inch pan. Prepare cornbread mix as directed on package using the milk and egg. Spread in prepared pan. Batter will be thin. Bake for just about 8 minutes or until golden brown.

    While cornbread is baking brown beef and onions in a skillet. Drain. Stir in tomato paste, seasoning mix, drained kidney beans, and water. Bring to a boil. Reduce heat and cook at a simmer for about 10 minutes. Add salt and pepper as desired.

    Pour meat mixture over warm cornbread. Sprinkle cheese on top. Broil just long enough to melt cheese. Serve by cutting in squares.
