What a nice Memorial Day weekend we had here in Georgia. Time spent with friends and lots of good food. I started the weekend with Jamie Beecham's "Hamburger Steaks with Gravy". We had Crock Pot Ribs on Saturday which I made BBQ sammies with the leftovers on Sunday. I served these with Bonnie Dare's wonderful blue ribbon "Best Baked Oven Fries and Potato Wedges". Dessert was Bea Liles "Homemade White Cake" that I added a cherry frosting to. On Monday we still had tons of leftover and this is what I came up with. It was absolutely delish! And a great way to change up some leftovers.

Ingredients

- left over cornbread wedges
- left over smothered hamburger steak
- left over oven fries, chopped
- bell pepper, chopped
- onions, chopped
- tomato, diced
- black pepper

How To Make slices of jap heaven on toasted cornbread wedges

Step 1

Slice cornbread wedges in half; butter and toast in oven under broiler until browned.

Step 2

Mean while cut up hamburger steaks into bite size pieces and heat in leftover gravy. NOTE: you can zap in microwave or heat in a skillet on top of stove.
Step 3

In a small skillet, saute onion and peppers in a tablespoon of olive oil, just until hot but not completely tender. Add the oven fries and cook on med low heat until nice and warm.
Step 4

Once cornbread is toasted, remove from oven and place wedges on plates, spoon hamburger steak and gravy over bread, add potatoes to top. Top with diced tomatoes and spoon a little more gravy over tomatoes. Sprinkle with pepper.
