Ingredients
- 1 package beef skirt steak 1-1-1/2 pounds
- 1 small lime
- 1/2 teaspoon salt and pepper
- 1/4 teaspoon cumin
- 1/2 medium sweet onion chopped
- 6 small ripe tomatoes
- 3 tablespoons butter, room temperature
- 1/2 cup cilantro, fresh
How To Make skirt steak with pico de gallo

Step 1Smear the butter on both sides of the steak and grill to your liking.Remove from heat and let I rest on a covered plate. In the meantime get out your food processor.

Step 2cut the tomatoes in half,add to the food processor with the onion,cilantro,salt and pepper,cumin and the juice of the lime with half of it's zest. Pulse three or four times. remove to a serving bowl.

Step 3Slice your steak and spoon the pico de gall over the steak and enjoy! Serve with my roasted potatoes and some grilled corn on the cob or warm tortillas! Enjoy!
