I love this umami punch to the sauce for this steak.

Ingredients

  • 2 skirt steaks (8 oz each)
  • 1 tablespoon fresh lime juice
  • salt and pepper
  • 1 tablespoon olive oil
  • 1 can anchovies, drained and minced (2 oz)
  • 2 scallions, diced
  • 2 cloves garlic, minced
  • 1/4 cup beef broth
  • 2 tablespoons cilantro, minced

How To Make skirt steak with anchovies and lime

  • Step 1
    Season the steaks with salt and pepper and rub the lime juice on them. Let sit at room temperature for 30 minutes.
  • Step 2
    Heat the oil in a large skillet. Once hot, sear the steak on each side about 2 minutes per side for medium rare. Set aside and keep warm.
  • Step 3
    Add the scallions, anchovies, and garlic to the same pan. Cook 30 seconds, add the beef broth, and cook about 1 minute.
  • Step 4
    Stir in the cilantro and serve the sauce over the steak.
