1/2 lb
red bell pepper, coarsely chopped
1/2 lb
yellow onions, chopped
garlic cloves, mashed
2 can(s)
tomatoes, canned italian style with juice
1 lb
lean ground beef
2 tsp
ground cumin
2 tsp
1 Tbsp
chili powder
1/4 tsp
hot red pepper, sauce
1/2 tsp
kosher salt
2 tsp
cider vinegar
freshly ground black pepper to taste

How to Make Skinny Chili


  • 1Finely chop pepper, onion and garlic in a food processor.
  • 2Scrape into a 13x10x2" oval dish and stir in tomatoes, breaking up any whole tomatoes.
  • 3Cover tightly with microwave plastic wrap.
  • 4Cook at 100% for 9 minutes (in a 650-700 watt oven).
  • 5Prick plastic to release steam.
  • 6Remove from microwave.
  • 7Uncover carefully and stir in beef and remaining ingredients except vinegar and black pepper.
  • 8Cover tightly with microwave plastic wrap.
  • 9Cook at 100% for 5 minutes.
  • 10Prick plastic.
  • 11Remove from oven and uncover.
  • 12Stir in vinegar and pepper to taste.
  • 13Stir well, breaking up any large chunks of beef.
  • 14Serve over baked potatoes or rice.
