Skinny Chili

1/2 lb
red bell pepper, coarsely chopped
1/2 lb
yellow onions, chopped
garlic cloves, mashed
2 can(s)
tomatoes, canned italian style with juice
1 lb
lean ground beef
2 tsp
ground cumin
2 tsp
1 Tbsp
chili powder
1/4 tsp
hot red pepper, sauce
1/2 tsp
kosher salt
2 tsp
cider vinegar
freshly ground black pepper to taste


1Finely chop pepper, onion and garlic in a food processor.
2Scrape into a 13x10x2" oval dish and stir in tomatoes, breaking up any whole tomatoes.
3Cover tightly with microwave plastic wrap.
4Cook at 100% for 9 minutes (in a 650-700 watt oven).
5Prick plastic to release steam.
6Remove from microwave.
7Uncover carefully and stir in beef and remaining ingredients except vinegar and black pepper.
8Cover tightly with microwave plastic wrap.
9Cook at 100% for 5 minutes.
10Prick plastic.
11Remove from oven and uncover.
12Stir in vinegar and pepper to taste.
13Stir well, breaking up any large chunks of beef.
14Serve over baked potatoes or rice.
