Ingredients

  • 1/2 pound red bell pepper, coarsely chopped
  • 1/2 pound yellow onions, chopped
  • 2 - garlic cloves, mashed
  • 2 cans tomatoes, canned italian style with juice
  • 1 pound lean ground beef
  • 2 teaspoons ground cumin
  • 2 teaspoons oregano
  • 1 tablespoon chili powder
  • 1/4 teaspoon hot red pepper, sauce
  • 1/2 teaspoon kosher salt
  • 2 teaspoons cider vinegar
  • - freshly ground black pepper to taste

How To Make skinny chili

  • Step 1
    Finely chop pepper, onion and garlic in a food processor.
  • Step 2
    Scrape into a 13x10x2\" oval dish and stir in tomatoes, breaking up any whole tomatoes.
  • Step 3
    Cover tightly with microwave plastic wrap.
  • Step 4
    Cook at 100% for 9 minutes (in a 650-700 watt oven).
  • Step 5
    Prick plastic to release steam.
  • Step 6
    Remove from microwave.
  • Step 7
    Uncover carefully and stir in beef and remaining ingredients except vinegar and black pepper.
  • Step 8
    Cover tightly with microwave plastic wrap.
  • Step 9
    Cook at 100% for 5 minutes.
  • Step 10
    Prick plastic.
  • Step 11
    Remove from oven and uncover.
  • Step 12
    Stir in vinegar and pepper to taste.
  • Step 13
    Stir well, breaking up any large chunks of beef.
  • Step 14
    Serve over baked potatoes or rice.
