Ingredients
- 1/2 pound red bell pepper, coarsely chopped
- 1/2 pound yellow onions, chopped
- 2 - garlic cloves, mashed
- 2 cans tomatoes, canned italian style with juice
- 1 pound lean ground beef
- 2 teaspoons ground cumin
- 2 teaspoons oregano
- 1 tablespoon chili powder
- 1/4 teaspoon hot red pepper, sauce
- 1/2 teaspoon kosher salt
- 2 teaspoons cider vinegar
- - freshly ground black pepper to taste
How To Make skinny chili

Step 1Finely chop pepper, onion and garlic in a food processor.

Step 2Scrape into a 13x10x2\" oval dish and stir in tomatoes, breaking up any whole tomatoes.

Step 3Cover tightly with microwave plastic wrap.

Step 4Cook at 100% for 9 minutes (in a 650-700 watt oven).

Step 5Prick plastic to release steam.

Step 6Remove from microwave.

Step 7Uncover carefully and stir in beef and remaining ingredients except vinegar and black pepper.

Step 8Cover tightly with microwave plastic wrap.

Step 9Cook at 100% for 5 minutes.

Step 10Prick plastic.

Step 11Remove from oven and uncover.

Step 12Stir in vinegar and pepper to taste.

Step 13Stir well, breaking up any large chunks of beef.

Step 14Serve over baked potatoes or rice.
