Ingredients
- 1 pound lean ground beef
- 1/2 white onion
- 2 cloves garlic
- 2 bell peppers
- 1 14.5 oz can of diced tomatoes
- 2 cups beef broth
- 2 tablespoons tomato paste
- 1 cup long grain white rice
- 1 cup grated cheddar cheese
- salt and pepper to taste
How To Make skillet unstuffed peppers

Step 1Chop onions, peppers and garlic

Step 2PREPARATION In a large skillet over medium heat, brown the ground beef with the onion until beef is no longer pink

Step 3Return skillet to heat and add diced tomatoes, broth, tomato paste, rice, and salt and pepper.

Step 4Cook two minutes then add green peppers and garlic

Step 5Bring to a boil then cover and simmer. Let cook until rice is done. About 15 minutes

Step 6Fluff rice with a fork, top with cheese and cover a few minutes until cheese is melted then serve
