Ingredients

  • 4 lb
    beef rump roast
  • 8
    black olives
  • 8
    stuffed green olives
  • 1
    garlic clove, chopped
  • 2 oz
    salt pork, chopped
  • ·
    flour
  • 4 Tbsp
    olive oil
  • 1 can(s)
    plum tomatoes
  • 1 large
    onion, sliced
  • 1/4 c
    raisins
  • ·
    salt and pepper to taste

How to Make Sicilian Pot Roast

Step-by-Step

  1. Cut slits into meat and stuff alternately with black olives, stuffed olives, bits of garlic and salt pork.
  2. Dredge the meat with flour and brown in hot oil.
  3. Add tomatoes, raisins, and onions; season with salt and pepper.
  4. Cover and cook in moderate 350 degree oven 2 1/2 hours or until tender.
  5. Check occasionally, and add water if needed.
