Ingredients

  • 4 pounds beef rump roast
  • 8 - black olives
  • 8 - stuffed green olives
  • 1 - garlic clove, chopped
  • 2 ounces salt pork, chopped
  • - flour
  • 4 tablespoons olive oil
  • 1 can plum tomatoes
  • 1 large onion, sliced
  • 1/4 cup raisins
  • - salt and pepper to taste

How To Make sicilian pot roast

  • Step 1
    Cut slits into meat and stuff alternately with black olives, stuffed olives, bits of garlic and salt pork.
  • Step 2
    Dredge the meat with flour and brown in hot oil.
  • Step 3
    Add tomatoes, raisins, and onions; season with salt and pepper.
  • Step 4
    Cover and cook in moderate 350 degree oven 2 1/2 hours or until tender.
  • Step 5
    Check occasionally, and add water if needed.
