Ingredients
- 4 pounds beef rump roast
- 8 - black olives
- 8 - stuffed green olives
- 1 - garlic clove, chopped
- 2 ounces salt pork, chopped
- - flour
- 4 tablespoons olive oil
- 1 can plum tomatoes
- 1 large onion, sliced
- 1/4 cup raisins
- - salt and pepper to taste
How To Make sicilian pot roast

Step 1Cut slits into meat and stuff alternately with black olives, stuffed olives, bits of garlic and salt pork.

Step 2Dredge the meat with flour and brown in hot oil.

Step 3Add tomatoes, raisins, and onions; season with salt and pepper.

Step 4Cover and cook in moderate 350 degree oven 2 1/2 hours or until tender.

Step 5Check occasionally, and add water if needed.
