This is one of my family's favorite comfort foods. I serve it with a tossed salad, and some Italian bread. Yummo!

Ingredients

  • 4-5 medium potatoes, peeled & quartered
  • - butter, milk, salt & pepper
  • 2 pounds ground beef
  • 1 medium onion, chopped
  • 1 large carrot, diced small
  • 2 - celery stalks, chopped
  • 2 cups beef broth
  • 3 tablespoons pan drippings
  • 2 tablespoons flour
  • 1 teaspoon allspice, ground
  • - salt & pepper to taste
  • 1 14 oz cans whole kernal corn, drained

How To Make shepherd's pie

  • Step 1
    Boil potatoes in salted water until tender - drain. Add butter, milk, salt & pepper. Mash and set aside.
  • Step 2
    In large frying pan saute onion, celery & carrol until translucent. Add ground beef, breaking apart into small pieces and browning until no pink is visible. Drain off fat reserving 3 tbsps. for roux.
  • Step 3
    Add allspice, salt & pepper to meat mixture. Stir together well, then pour into casserole dish large enough to hold it with about a 2 inch headspace.
  • Step 4
    To frying pan on medium high heat, add reserved fat. Add flour and whisk together making a roux.
  • Step 5
    Add beef broth and whisk quickly so lumps will not occur. Salt & pepper to taste. Pour over meat mixture and allow to run down in to the meat.
  • Step 6
    Pour corn on top of all, spreading out to cover entire top.
  • Step 7
    Spread mashed potatoes over all, evenly.
  • Step 8
    Bake in preheated 350 deg. oven 45 min. - 1 hour.
