shephards pie (quick & easy)

This is so easy to make & takes very little time,less than an hour. It's a traditional dish around St Patricks' day at our home. Serve with a side salad.

Ingredients
- 2 - lbs of ground beef
- 1 tablespoon tomato paste
- 1 can peas & carrots
- 1 can corn
- 1 jar beef gravy
- 1 - 2 lb container of prepared mashed potatoes
- 1 - small onion diced (or onion flakes to taste) optional
How To Make shephards pie (quick & easy)

Step 1Saute the onion in 2 tbs butter until softened.

Step 2Add ground beef & cook until no longer pink, drain off excess grease.

Step 3While ground beef is cooking, warm potatoes in microwave as per pkg directions.

Step 4Mix the veggies, tomato paste & gravy in with the ground beef.

Step 5Place this mixture into a 2 qt ovenproof casserole dish.

Step 6Layer the mashed potatoes on top, run a fork through it to form peaks. Then place under broiler until brown.
