Ingredients

  • 1 lb
    lean ground beef
  • 2 Tbsp
    dried onions, minced
  • 1 can(s)
    rotel diced tomatoes and green chilies (10 oz.)
  • 1 can(s)
    cream of mushroom soup (10.75 oz.)
  • 2 can(s)
    pinto beans, not drained (15.5 oz.)
  • 16
    white corn tortillas ( broken into 4ths)
  • 1 pkg
    taco seasoning mix (mild) 1.5 oz.
  • 2 c
    shredded, sharp cheese
  • 2 tsp
    minced garlic

How to Make Sharon's Mexican Casserole

Step-by-Step

  1. Brown ground beef in large skillet, crumble and add dried onions and garlic.
    Add the tomatoes, can soup, beans and Taco Seasoning Mix.
  2. In a 9 X 13 pan, put 1/2 the crumbled tortillas, then 1/2 the meat mixture----then a layer of tortillas and meat mixture.
  3. Bake in 400 degree oven for 30 minutes. Take out and sprinkle with cheese and bake 5 more minutes.
