1 lb
lean ground beef
2 Tbsp
dried onions, minced
1 can(s)
rotel diced tomatoes and green chilies (10 oz.)
1 can(s)
cream of mushroom soup (10.75 oz.)
2 can(s)
pinto beans, not drained (15.5 oz.)
white corn tortillas ( broken into 4ths)
1 pkg
taco seasoning mix (mild) 1.5 oz.
2 c
shredded, sharp cheese
2 tsp
minced garlic

How to Make Sharon's Mexican Casserole


  • 1Brown ground beef in large skillet, crumble and add dried onions and garlic.
    Add the tomatoes, can soup, beans and Taco Seasoning Mix.
  • 2In a 9 X 13 pan, put 1/2 the crumbled tortillas, then 1/2 the meat mixture----then a layer of tortillas and meat mixture.
  • 3Bake in 400 degree oven for 30 minutes. Take out and sprinkle with cheese and bake 5 more minutes.
