Ingredients

  • 1 pound lean ground beef
  • 2 tablespoons dried onions, minced
  • 1 can rotel diced tomatoes and green chilies (10 oz.)
  • 1 can cream of mushroom soup (10.75 oz.)
  • 2 cans pinto beans, not drained (15.5 oz.)
  • 16 - white corn tortillas ( broken into 4ths)
  • 1 package taco seasoning mix (mild) 1.5 oz.
  • 2 cups shredded, sharp cheese
  • 2 teaspoons minced garlic

How To Make sharon's mexican casserole

  • Step 1
    Brown ground beef in large skillet, crumble and add dried onions and garlic. Add the tomatoes, can soup, beans and Taco Seasoning Mix.
  • Step 2
    In a 9 X 13 pan, put 1/2 the crumbled tortillas, then 1/2 the meat mixture----then a layer of tortillas and meat mixture.
  • Step 3
    Bake in 400 degree oven for 30 minutes. Take out and sprinkle with cheese and bake 5 more minutes.
