My sons growing up loved Hamburger Helpers dinners and after a while I became concerned about the chemicals. So, I started working on making my own versions & this was one of their favorites.

Ingredients

  • 1 1/2 pounds lean ground beef
  • 1 medium onion chopped
  • 2 cloves garlic, minced
  • 1 cup mushroom caps, sliced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons ap flour
  • 1 package beef broth
  • 1 teaspoon thyme, dried
  • 2 pounds yuko gold potatoes sliced thin
  • 1 cup sour cream, lite
  • 1/2 cup milk or cream

How To Make scratch hamburger helper potatoe strognoff

  • Step 1
    Heat large skillet to medium heat. Add beef, onions, garlic, salt & pepper to large skillet. Brown beef until done & veggies are soft. Add mushrooms until cooked.
  • Step 2
    Sprinkle flour over the pan & stir for 2 minutes to coat. Slowly pour in beef broth & let come back up to a slow boil. Add potatoes slices & thyme. Cover for 20 minutes stirring occasionally. When potatoes are tender, remove from heat & add sour cream & cream. Great with rice or egg noodles.
  • Step 3
    This is great as a left over the next day. If the dish sauce is too thick, just add water or beef broth.
