My sons growing up loved Hamburger Helpers dinners and after a while I became concerned about the chemicals. So, I started working on making my own versions & this was one of their favorites.

Ingredients

  • 1 1/2 lb
    lean ground beef
  • 1 medium
    onion chopped
  • 2 clove
    garlic, minced
  • 1 c
    mushroom caps, sliced
  • 1 tsp
    kosher salt
  • 1/2 tsp
    black pepper
  • 2 Tbsp
    ap flour
  • 1 pkg
    beef broth
  • 1 tsp
    thyme, dried
  • 2 lb
    yuko gold potatoes sliced thin
  • 1 c
    sour cream, lite
  • 1/2 c
    milk or cream

How to Make Scratch Hamburger Helper Potatoe Strognoff

Step-by-Step

  1. Heat large skillet to medium heat.
    Add beef, onions, garlic, salt & pepper to large skillet. Brown beef until done & veggies are soft. Add mushrooms until cooked.
  2. Sprinkle flour over the pan & stir for 2 minutes to coat. Slowly pour in beef broth & let come back up to a slow boil. Add potatoes slices & thyme. Cover for 20 minutes stirring occasionally. When potatoes are tender, remove from heat & add sour cream & cream. Great with rice or egg noodles.
  3. This is great as a left over the next day. If the dish sauce is too thick, just add water or beef broth.
