savory smoked sausage and potatoes
My family loves this dish! It makes its own sauce as it cooks. We love it just the way it is, but you could always add some broccoli or peas if you like. This is also very good started on the stove and then finished on the grill (or smoker) instead of the oven.

These smoked sausage and potatoes are a hearty meal for a cold night. It's almost like a sausage and potato stew. Sauteing diced carrots and onions in the same pan as the sausage is the flavor base for this dish. Garlic powder, celery seed, salt, pepper, and parsley flakes add just enough seasoning to balance the flavors. This is a dinner your whole family will enjoy.

Ingredients
- 1 small onion, finely diced
- 1 - carrot, finely diced
- 1 pound smoked beef sausage
- 6 medium potatoes, peeled and cubed
- 1 tablespoon olive oil
- 3 cups reduced-sodium chicken broth
- 1/4 teaspoon garlic powder
- 1/4 teaspoon celery seed
- 2 tablespoons parsley flakes
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/3 cup all-purpose flour
How To Make savory smoked sausage and potatoes

Step 1Preheat oven to 350 degrees F. Finely dice the onion and carrot and set aside. You can use a food processor for this.

Step 2Cut sausage about 1/2 inch - 3/4 inch slices. Set aside. Peel and cube potatoes. Set aside.

Step 3Heat a large oven-safe pot. Add olive oil and brown the sausage.

Step 4Remove sausage from the pot with a slotted spoon and set aside. You want to leave as much oil as possible in the pot.

Step 5Add the diced carrot and onion to the pot and cook for just a minute.

Step 6Add the sausage back.

Step 7Add the potatoes.

Step 8Add the garlic powder, celery seed, parsley, salt, and pepper. Give it a good mix.

Step 9Then add the flour and mix well.

Step 10Add chicken stock and stir well remembering to scrape the bottom to loosen the yummy bits.

Step 11Either pour into a 9x13 inch baking dish and cover with foil or place the lid on the pot. Bake for 40 minutes - 1 hour or until potatoes are tender. *You can skip the oven and put it on the grill or smoker. Keep it over indirect heat. Check it and stir it every so often.

Step 12Let sit for 5 minutes so the liquid will thicken before serving.
