My mom was famous for her meatloaf. Everyone loved it and raved about it. She died of breast cancer in 2000. After she passed, I located her personal cookbook filled with handwritten recipes she kept, but I couldn't find any written recipe for her meatloaf. My mom was Swedish and grew up in Minnesota with many Scandinavian recipes. She was also a baker and a wizard with creams, sauces, and gravies. I am still searching for the perfect replica of her recipe. If these ingredients are familiar to you, feel free to share. Serve with mashed potatoes, pasta, or rice.

Ingredients

  • MEATLOAF
  • 2 pounds ground beef
  • 1 medium onion, chopped fine
  • 2 large eggs, lightly beaten
  • 1/2 - sleeve soda crackers (saltines), crushed
  • 1 can cream of mushroom soup (10.5 oz)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • GRAVY
  • 1/2 cup meatloaf drippings
  • 1 package gravy mix, brown, beef or mushroom
  • 1 can cream of mushroom soup (10.5 oz)
  • 1/2 cup water

How To Make mushroom meatloaf

  • Preheat oven to 350 degrees.
    Step 1
    Preheat oven to 350 degrees F.
  • Mix ground beef, chopped onion, eggs, crushed crackers, cream of mushroom soup, salt, and pepper.
    Step 2
    In a large bowl, add the ground beef, chopped onion, eggs, crushed crackers, cream of mushroom soup, salt, and pepper.
  • Gently mix.
    Step 3
    Mix well.
  • Shape the meat into a loaf and bake.
    Step 4
    In a baking pan, shape the mix into a loaf shape. Bake for 1 hour.
  • Add drippings, mushroom soup gravy mix, and water, and stir until thick.
    Step 5
    Let the meatloaf rest while you make the gravy. In a saucepan, add 1/2 cup drippings, mushroom soup gravy mix, and water. Bring to a boil. Stir until thickened.
  • Pour over the meatloaf and serve.
    Step 6
    Pour over meatloaf or serve in a gravy boat on the side.
