My Mom was famous for her meatloaf. Everyone loved it and raved about it. She died of breast cancer in 2000. After she passed I located her personal cookbook filled with hand written recipes she kept, but I couldn't find any written recipe recipe for her meatloaf. My Mom was Swedish and grew up in MN with many Scandinavian recipes. She was also a master baker and a wizard with creams, sauces and gravies. I am still searching for the perfect replica of her meatloaf. So far this is what I have matched of her meatloafs flavor. If these ingredients are familiar to you feel free to share.

MEATLOAF

2 lbground beef or veal/beef/pork mix

1 mediumonion - chopped fine

2 stalk(s)celery - chopped fine

2eggs - lightly beaten

2 tspworcestershire sauce

1 csoda crackers - crushed
-
1 can(s)cream of mushroom soup

1 tspdry mustard
-
1 tspsalt
-
1/2 tsppepper
-
GRAVY
-
1/2 cmeatloaf drippings
-
1 pkggravy mix - brown, beef or mushroom
-
1 can(s)cream of mushroom soup

1 cwater
How to Make Savory Mushroom Meatloaf
- Pre heat oven 350 degrees
- In a large bowl combine all 10 meatloaf ingredients. Mix just until all ingredients are incorporated.
- In a baking pan shape mix into loaf shape.
- Bake for 1 hour. Let rest while making gravy.
- Save 1/2 cup of drippings.
- In a sauce pan mix dippings, mushroom soup gravy mix and water.
- Bring to a boil, stirring until it thickens.
- Pour over meatloaf or serve in a gravy boat on the side.
- Serve with mashed potatoes, pasta or rice.
