mushroom meatloaf
My mom was famous for her meatloaf. Everyone loved it and raved about it. She died of breast cancer in 2000. After she passed, I located her personal cookbook filled with handwritten recipes she kept, but I couldn't find any written recipe for her meatloaf. My mom was Swedish and grew up in Minnesota with many Scandinavian recipes. She was also a baker and a wizard with creams, sauces, and gravies. While this mushroom meatloaf may not win a beauty contest, it will win over the hearts of your family. Full of flavor, adding cream of mushroom soup to the loaf gives it a moist texture. Making a gravy from the drippings adds tons of flavor, and cream of mushroom soup makes it super creamy. Enjoy this comfort food any day of the week with mashed potatoes and a veggie.
Ingredients
- MEATLOAF
- 2 pounds ground beef
- 1 medium onion, chopped fine
- 2 large eggs, lightly beaten
- 1/2 - sleeve soda crackers (saltines), crushed
- 1 can cream of mushroom soup (10.5 oz)
- 1 teaspoon salt
- 1/2 teaspoon pepper
- GRAVY
- 1/2 cup meatloaf drippings
- 1 package gravy mix, brown, beef or mushroom
- 1 can cream of mushroom soup (10.5 oz)
- 1/2 cup water
How To Make mushroom meatloaf

Step 1Preheat oven to 350 degrees F.

Step 2In a large bowl, add the ground beef, chopped onion, eggs, crushed crackers, cream of mushroom soup, salt, and pepper.

Step 3Mix well.

Step 4In a baking pan, shape the mix into a loaf shape. Bake for 1 hour.

Step 5Let the meatloaf rest while you make the gravy. In a saucepan, add 1/2 cup drippings, mushroom soup gravy mix, and water. Bring to a boil. Stir until thickened.

Step 6Pour over meatloaf or serve in a gravy boat on the side.
