1/2 lb
beef tenderloin trimmings, in 1" cubes
1 c
shiitake mushrooms, sliced
1/2 c
shallots, chopped
1 c
spinach, fresh
1/2 c
white wine, dry
3/4 c
veal stock
1 Tbsp
heavy cream
1 Tbsp
"just a pinch" of salt
"just a pinch" of pepper

How to Make Sauteed Beef Tips with Shiitakes


  • 1Heat the oil in a large skillet.
  • 2Season the beef with salt and pepper, then sear it in the hot oil, making sure to brown it on all sides.
  • 3Add the mushrooms and shallots, toss, and continue to cook for 2 minutes.
  • 4Add the wine and reduce 1 minute.
  • 5Add the spinach and stock, reduce for 2 minutes.
  • 6Add cream, butter, and season with salt and pepper.
  • 7Garnish with parsley.
