Ingredients

  • 3 pounds chili meat
  • 6 tablespoons chili powder
  • 1 tablespoon oregano
  • 1 tablespoon cumin
  • 1 tablespoon salt
  • 1/2 teaspoon cayenne pepper
  • 2 large garlic cloves, minced
  • 1 teaspoon pepper sauce
  • 1.5 quarts water
  • 1/4 cup white corn meal

How To Make san antonio chili

  • Step 1
    In dutch oven, brown ground meat; drain.
  • Step 2
    Add seasoning and water; heat to boil.
  • Step 3
    Reduce heat, cover and simmer for 1 hour and 30 minutes.
  • Step 4
    Skim off fat.
  • Step 5
    Stir in corn meal and simmer uncovered for 30 minutes, stirring occasionally.
  • Step 6
    Variation: Try part ground beef, pork and venison as a substitute for the chili meat for a wonderfull flavor variation.
