Ingredients
- 2 pounds ground beef or diced stew meat; (try venison if you can)
- 1 cup diced onion
- 3 tablespoons minced fresh garlic
- 1 can diced fire roasted tomatoes with liquid
- 1/4 cup chili powder
- 1 tablespoon ground cumin
- 1 tablespoon paprika
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon oregano, dried
- 2 cups chicken broth, unsalted
- 2 cups beef broth, reduced sodium

Step 1Brown meat; add onions and garlic and saute lightly; stir in spices; add tomatoes and broth; bring to a boil; reduce heat and simmer for 2 to 3 hours. * Adjust spices to desired heat level; serve with fresh chopped cilantro, onion, shredded cheese, sour cream, corn chips. You can also add a can of pinto or kidney beans if you like.
