I am following in my mom's great tradition of mixing things up when it comes to meatloaf. I have actually made this (or variations of it) a number of times and it's always a hit. Don't worry about it being a little loose - the rice will absorb flavors as it cooks.

ground beef
1 pkg
onion soup mix
1/2 c
1 c
rice, cooked, cooled
1 c
1/2 c
cheddar cheese, shredded (optional)
1/2 c
chili sauce
1/4 c
brown sugar
1-2 dash(es)
worcestershire sauce

How to Make Salsa Meatloaf


  • 1Preheat oven to 350. Mix all ingredients together except for chili sauce, brown sugar and worcestershire.
  • 2Form into loaf and put in loaf pan, baking pan or cookie sheet lined with foil.
  • 3Mix chili sauce, brown sugar and worcestershire together and spread over meatloaf.
  • 4Bake for about 1 1/2 hours or until well done. Let sit for about 10-15 minutes to make slicing easier.
