salsa meatloaf

I am following in my mom's great tradition of mixing things up when it comes to meatloaf. I have actually made this (or variations of it) a number of times and it's always a hit. Don't worry about it being a little loose - the rice will absorb flavors as it cooks.

Ingredients

  • 2 pounds ground beef
  • 1 - egg
  • 1 package onion soup mix
  • 1/2 cup water
  • 1 cup rice, cooked, cooled
  • 1 cup salsa
  • 1/2 cup cheddar cheese, shredded (optional)
  • 1/2 cup chili sauce
  • 1/4 cup brown sugar
  • 1-2 dash worcestershire sauce

How To Make salsa meatloaf

  • Step 1
    Preheat oven to 350. Mix all ingredients together except for chili sauce, brown sugar and worcestershire.
  • Step 2
    Form into loaf and put in loaf pan, baking pan or cookie sheet lined with foil.
  • Step 3
    Mix chili sauce, brown sugar and worcestershire together and spread over meatloaf.
  • Step 4
    Bake for about 1 1/2 hours or until well done. Let sit for about 10-15 minutes to make slicing easier.
