salsa meatloaf

This is my take on traditional meatloaf. Instead of the eggs you normally use for the binder, I use salsa. That with the taco seasoning gives this meatloaf a very nice flavor. If you like spicy you can always up the heat by using a hotter salsa and the taco seasoning with jalapenos.

Ingredients

  • 1 1/2 pounds 80% lean ground beef
  • 1 package taco seasoning mix
  • 1/2 can *bread crumbs, dry - seasoned or not
  • 1 cup *salsa, mild
  • 1/4 cup taco sauce - enough to cover the top of the loaf

How To Make salsa meatloaf

  • Step 1
    Mix the ground beef, taco seasoning, bread crumbs and salsa together in a large bowl. *I do not measure what I use for bread crumbs or salsa as I base it on the consistency.
  • Step 2
    Form into a loaf shape and place in a loaf pan. Put in a pre-heated 375 degree oven for 30 minutes. Remove from oven and pour the taco sauce over the top of the loaf. Return to the oven and continue baking for an additional 30 - 45 minutes.
