Ingredients

  • 3 pounds beef chuck roast
  • 2 tablespoons butter
  • 2 medium onions chopped
  • 1 carrot peeled and chopped
  • 1 stalk celery chopped
  • 1 tablespoon tomato paste
  • 3 cloves garlic minced
  • 3 cups beef broth
  • 1 sprig thyme
  • 2 bay leaves
  • salt and pepper
  • parsley for garnish

How To Make roast with yankee pot roast sauce

  • Step 1
    Place the in a slow cooker and set aside.
  • Step 2
    Melt the butter in a saucepan. Add the onions, carrot and celery. Add some salt and pepper and cook until softened. Add the tomato paste and garlic. cook 30 seconds
  • Step 3
    Stir in the broth. Add the thyme and bay leaves. Cook until reduces to about 4 cups. Remove the thyme and bay leaves and pour over roast in crockpot
  • Step 4
    Cook on low for 8 hours. Serve over rice, potatoes, or rice noodles. Garnish with parsley
