Roast Tenderloin Of Beef

4 lb
beef tenderloin
2 Tbsp
rosemary, fresh chopped
2 Tbsp
thyme, fresh minced
1 Tbsp
garlic cloves, minced
2 tsp
cracked pepper
1.5 tsp
kosher salt


1Preheat oven to 525.
2Pat meat dry.
3In a small bowl combine rosemary, thyme, garlic, pepper and salt.
4Rub mixture onto meat and arrange meat on a rack in a roasting pan.
5Roast meat for 45 to 50 minutes, or until a meat thermometer inserted in the thickest part of the meat registers 130 to 140 for medium-rare.
6Transfer meat to a cutting board and let rest, loosely covered, for 10 minutes.
7Carve into thin slices for serving.
