Ingredients

  • 4 pounds beef tenderloin
  • 2 tablespoons rosemary, fresh chopped
  • 2 tablespoons thyme, fresh minced
  • 1 tablespoon garlic cloves, minced
  • 2 teaspoons cracked pepper
  • 1.5 teaspoons kosher salt

How To Make roast tenderloin of beef

  • Step 1
    Preheat oven to 525.
  • Step 2
    Pat meat dry.
  • Step 3
    In a small bowl combine rosemary, thyme, garlic, pepper and salt.
  • Step 4
    Rub mixture onto meat and arrange meat on a rack in a roasting pan.
  • Step 5
    Roast meat for 45 to 50 minutes, or until a meat thermometer inserted in the thickest part of the meat registers 130 to 140 for medium-rare.
  • Step 6
    Transfer meat to a cutting board and let rest, loosely covered, for 10 minutes.
  • Step 7
    Carve into thin slices for serving.
