- 4 pounds beef tenderloin
- 2 tablespoons rosemary, fresh chopped
- 2 tablespoons thyme, fresh minced
- 1 tablespoon garlic cloves, minced
- 2 teaspoons cracked pepper
- 1.5 teaspoons kosher salt

Step 1Preheat oven to 525.

Step 2Pat meat dry.

Step 3In a small bowl combine rosemary, thyme, garlic, pepper and salt.

Step 4Rub mixture onto meat and arrange meat on a rack in a roasting pan.

Step 5Roast meat for 45 to 50 minutes, or until a meat thermometer inserted in the thickest part of the meat registers 130 to 140 for medium-rare.

Step 6Transfer meat to a cutting board and let rest, loosely covered, for 10 minutes.

Step 7Carve into thin slices for serving.
