Ingredients

  • FOR THE BEEF
  • 8 ounces tenderloin, sirloin or rib eye steak cut across the grain into thin strips
  • 1 teaspoon baking soda
  • 1/4 teaspoon white pepper
  • 1 tablespoon thin soy sauce
  • NOODLES
  • 8 ounces rice noodles prepared according to package directions
  • 1 tablespoon thin soy sauce
  • 2 tablespoons black sweet soy sauce
  • 2 tablespoons vegetable oil
  • GRAVY
  • 4 ounces broccolini
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame paste
  • 3 tablespoons cornstarch
  • 1/2 cup brown sugar
  • 3 cups chicken stock
  • 1 tablespoon vegetable oil
  • 4 cloves garlic minced
  • GARNISHES
  • lime wedges
  • red chilie powder

How To Make rice noodles with beef and broccolini gravy

  • Step 1
    For the beef Mix the baking soda, white pepper and thin soy sauce together. Add the beef and mix well. Let marinate while preparing the rest of the dish.
  • Step 2
    Cut the broccolini at a bias and separate the leaves from the stalks and florets. Whisk together the oyster sauce, sesame paste, chicken stock, brown sugar and cornstarch together and set aside.
  • Step 3
    Prepare the noodles according to package directions. Mix the thin soy sauce and black sweet soy sauce together. Add oil to a large wok or skillet and add place the noodles in the wok. Drizzle the thin soy sauce and sweet soy sauce over the noodles and mix well then let the noodles brown a bit in the oil undisturbed. Flip the noodles and brown the other side then remove from pan and set aside.
  • Step 4
    Rinse the beef with cold water. Add oil to the pan and add the garlic. Cook 30 seconds. Add the beef and cook 30 seconds then remove to a dish and set aside.
  • Step 5
    Add the broccolini stalks and florets to the pan. Whisk the chicken stock mixture to make sure the cornstarch is mixed and pour it over the broccolini. Cook until thickened about 2 minutes. Add the meat into the gravy and the leafy parts of the broccolini.
  • Step 6
    Serve the gravy over the noodles and garnish with red chili powder and a slick of lime
