Ingredients

  • 1/2 cup rice, long grain
  • 1/3 pound ground beef
  • 1/3 medium onion, chopped
  • 1/3 cup green pepper, chopped
  • 1/3 can spaghetti sauce
  • 1/3 - egg
  • 1/3 package mozzarella cheese, shredded
  • 1/3 cup cottage cheese
  • pinch parmesan cheese, grated

How To Make rice lasagna

  • Step 1
    Cook rice following package directions, salt optional, and reserve.
  • Step 2
    Coat 13x9x2\" baking dish with nonstick vegetable-oil cooking spray.
  • Step 3
    Brown beef in large skillet over medium-high heat, breaking up clumps.
  • Step 4
    Carefully pour off excess fat.
  • Step 5
    Add onion and green pepper; cook, stirring, 2 minutes.
  • Step 6
    Add spaghetti sauce.
  • Step 7
    Beat egg slightly in medium-size bowl.
  • Step 8
    Stir in cottage cheese and mozzarella cheese.
  • Step 9
    Spread half the meat sauce over bottom of prepared baking dish.
  • Step 10
    Spoon half the rice evenly over sauce; top with half the cheese mixture.
  • Step 11
    Repeat layers and sprinkle top with parmesan cheese.
  • Step 12
    Bake in preheated 350 for 50 minutes.
  • Step 13
    Let stand 10 minutes before serving.
