Rice Cooker Hamburger Potato Soup

Donna Thiemann

This recipe is almost 80+ years old. It's a hearty main meal soup that I got from my mother in law before she passed on. I hope you try it and enjoy it as much as we do.

Rice Cooker

2 lb
lean ground beef, cooked and drained well
1/2 medium
yellow onion, chopped fine
2 medium
carrots, diced
1 small
celery stalk, diced
4 can(s)
beef broth
16 oz
water, cold
1-2 Tbsp
beef bouillon granules or to taste
6 large
potatoes, peeled and cubed
1/2 pt
milk or cream
1 lb
velveeta, cubed
12 can(s)
evaporated milk

1In a skillet, brown ground beef, onion, celery and carrots until vegetables are tender and beef is no longer pink. Drain off the fat. Then add the mixture to the rice cooker. Add the beef broth, beef bouillon, potatoes and water. Set machine to white rice and cook till machine shuts off. Potatoes should be tender, if not let the pot cool slightly and reset machine and cook until vegetables are tender.
2Reset rice cooker to white rice, then add the remaining ingredients. Stir well until soup comes to a boil and begins to thicken. Serve immediately.
