Ingredients
- 2 pounds lean ground beef, cooked and drained well
- 1/2 medium yellow onion, chopped fine
- 2 medium carrots, diced
- 1 small celery stalk, diced
- 4 cans beef broth
- 16 ounces water, cold
- 1-2 tablespoon beef bouillon granules or to taste
- 6 large potatoes, peeled and cubed
- 1/2 pint milk or cream
- 1 pound velveeta, cubed
- 12 cans evaporated milk

Step 1In a skillet, brown ground beef, onion, celery and carrots until vegetables are tender and beef is no longer pink. Drain off the fat. Then add the mixture to the rice cooker. Add the beef broth, beef bouillon, potatoes and water. Set machine to white rice and cook till machine shuts off. Potatoes should be tender, if not let the pot cool slightly and reset machine and cook until vegetables are tender.

Step 2Reset rice cooker to white rice, then add the remaining ingredients. Stir well until soup comes to a boil and begins to thicken. Serve immediately.
