This is my husband's and baby boy's favorite dinner. There's never leftovers from it.

Ingredients

  • 1 pound hamburger
  • 1/2 - white onion, chopped
  • 1 can condensed tomato soup
  • 2 cups shredded cheddar cheese (colby jack works really well too!)
  • 3 cups white minute rice, cooked
  • - garlic (optional)
  • - salt and pepper

How To Make rice casserole

  • Step 1
    In a skillet, brown Hamburger and onion until cooked(at this point you can add green bell pepper). Add salt, pepper and garlic salt to taste. After you have drained the meat, return to pan and add soup and 1 1/2 cup of cheese and mix until the cheese is melted. Pour into an 9 x13 casserole.
  • Step 2
    Cook rice (can use leftover rice from another night) Pour rice on top of meat mixture. Top rice with the rest of the cheese, add a little salt and pepper to taste.
  • Step 3
    Put in a preheated 350 degree oven for 20 minutes. Serve with a nice green salad and some garlic bread and watch it disappear!!!
