rice-a-roni casserole

I just made this up for diner this evening and it was so good I thought I would share it. I used the stewed tomatoes I caned from my garden this year! YUM!

Ingredients

  • 1 large box of rice-a-roni (any kind you like)
  • 1 pound ground beef
  • 1 can stewed tomatoes
  • 2 tablespoons garlic, minced
  • - salt and pepper to taste
  • 1/4 cup parmesan cheese
  • 2 tablespoons butter
  • 1 large egg

How To Make rice-a-roni casserole

  • Step 1
    in a sauce pan bring 3 cups water to boil
  • Step 2
    add rice-a-roni,garlic,and butter, boil for about 10-15 min.
  • Step 3
    in a frying pan season, cook ground beef and drain, add stewed tomatoes, stir
  • Step 4
    beat an egg and slowly incorporate some of the hot meat mixture into the egg then pour back into meat mixture and stir
  • Step 5
    slowly add rice mixture into the meat stirring constantly. Mix well
  • Step 6
    place mixture into a 9x13" baking dish, sprinkle parmesan cheese over the top
  • Step 7
    place in preheated oven of 350 degrees for 25-30 min.
