I just made this up for diner this evening and it was so good I thought I would share it. I used the stewed tomatoes I caned from my garden this year! YUM!

Ingredients

Add to Grocery List

  • 1 large
    box of rice-a-roni (any kind you like)
  • 1 lb
    ground beef
  • 1 can(s)
    stewed tomatoes
  • 2 Tbsp
    garlic, minced
  • ·
    salt and pepper to taste
  • 1/4 c
    parmesan cheese
  • 2 Tbsp
    butter
  • 1 large
    egg

How to Make Rice-A-Roni Casserole

Step-by-Step

  1. in a sauce pan bring 3 cups water to boil
  2. add rice-a-roni,garlic,and butter, boil for about 10-15 min.
  3. in a frying pan season, cook ground beef and drain, add stewed tomatoes, stir
  4. beat an egg and slowly incorporate some of the hot meat mixture into the egg then pour back into meat mixture and stir
  5. slowly add rice mixture into the meat stirring constantly. Mix well
  6. place mixture into a 9x13" baking dish, sprinkle parmesan cheese over the top
  7. place in preheated oven of 350 degrees for 25-30 min.
