I used shaved rib eye steak that I bought at Walmart, and it worked well.

Ingredients

  • 8 ounces shaved rib eye beef
  • 1 teaspoon baking soda
  • 3 tablespoons favorite stir-fry sauce, I used Kikkomen
  • 1 tablespoon dark soy sauce
  • 2 tablespoons brown sugar
  • 1/4 cup beef stock
  • 8 ounces pad thai noodles or other thicker rice noodles
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1/2 tablespoon Sriracha sauce
  • 1 carrot, shredded
  • 2 scallions, chopped
  • 1 cup bean sprouts
  • 2 cups green cabbage, chopped
  • more Sriracha for garnish or can use chili oil

How To Make rib eye noodle stir-fry

  • Step 1
    Place the beef in a colander and sprinkle the baking soda over the top and rub the meat lightly. Let it sit for 20 minutes.
  • Step 2
    Meanwhile, cut up your veggies and cook the noodles according to package instructions.
  • Step 3
    After 20 minutes, rinse the beef well and dry it with a paper towel.
  • Step 4
    Mix the stir-fry sauce, dark soy sauce, brown sugar, sriracha sauce, and beef stock and set aside.
  • Step 5
    In a wok or saucepan, add the oil. Add the garlic and ginger and stir-fry 1 minute.
  • Step 6
    Add the carrots and green onions, and cook for 1 minute. Add the beef and cabbage and stir-fry 2 minutes.
  • Step 7
    Add the noodles, sauce, and bean sprouts and stir-fry for 2 minutes. Serve drizzled with Sriracha sauce.
