I have adopted this orphaned recipe and tweaked it to make it my own. Will take a pic the next time I make it, if I can figure out how, lol. Let me know if you enjoy it!

Ingredients

  • 2 lb
    stew beef, seasoned, your choice
  • 1/4 c
    flour, or enough to coat beef
  • 1/4 c
    oil
  • 2 can(s)
    potatoes, chunked
  • 2 large
    carrot, chunked
  • 1 medium
    onion, rough chopped
  • 2 clove
    garlic, minced (i use a garlic press)
  • 1 can(s)
    beef consomme
  • 1 can(s)
    beef broth
  • 28 oz
    crushed tomatoes
  • 3/4 c
    red wine
  • 1/2 tsp
    thyme, crushed
  • 1/4 tsp
    rosemary, crushed
  • 1/4 tsp
    salt, or to taste
  • 1/8 tsp
    pepper, or to taste

How to Make Ria's Savory Beef Stew

Step-by-Step

  1. Season the beef chunks with salt & pepper, then coat with flour.
  2. Meanwhile, in a dutch oven w/lid, heat oil over medium high heat. Add the beef and cook, turning until browned.
  3. Remove beef and set aside.
  4. Add next 4 ingredients to saucepan; saute 5 minutes.
  5. Return beef to saucepan.
  6. Add beef consomme, and next 5 ingredients.
  7. Bring to a boil.
  8. Reduce heat, cover and simmer until meat is tender, about 45 minutes.
  9. Adjust seasoning as needed with salt and pepper.
  10. Serve over rice or noodles, accompanied by southern cornbread.
