Calling all reuben lovers! Think of reuben casserole as making a whole load of reuben sandwiches in a few simple quick steps. Rye bread, thinly sliced corned beef, a homemade thousand island dressing, sauerkraut and Swiss cheese are combined to make a mouthwatering taste experience. I love to serve this for a quick weeknight dinner or weekend lunch.

Ingredients

  • THOUSAND ISLAND DRESSING
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon grated onion
  • 1 tablespoon sweet pickle relish
  • 1/8 teaspoon smoked paprika
  • REUBEN CASSEROLE
  • 6 slices rye or pumpernickel bread, cubed
  • 1 pound thinly sliced corned beef, cut into bite size pieces
  • 16 ounces sauerkraut, well drained
  • 2 cups shredded Swiss cheese

How To Make reuben casserole

  • Step 1
    To make the thousand island dressing, whisk together all the ingredients in a small bowl.
  • Step 2
    Spray a 9×13-inch casserole dish with nonstick baking spray. Layer the casserole dish with rye bread cubes. Then layer the corned beef, thousand island dressing, sauerkraut, and shredded Swiss cheese.
  • Step 3
    Bake uncovered for about 20-25 minutes. Allow to cool for a couple of minutes while still covered before cutting.
