Ingredients For reuben casserole

  • 3 1/2 c
    potatoes, mashed
  • 1 can
    sauerkraut - rinsed & drained (16 oz can)
  • 4 md
    green onions - sliced
  • 2 c
    cooked corned beef
  • 1 c
    shredded swiss cheese

How To Make reuben casserole

  • 1
    Warm potatoes to soften.
  • 2
    Place in bowl w/onions & sauerkraut & mix together.
  • 3
    Spoon 2/3 of mixture in greased 3 qt. dish. Cover with beef and cheese.
  • 4
    Top with remaining potatoes. Sprinkle with paprika.
  • 5
    Bake uncovered. Enjoy with a green vegetable or salad.
