Ingredients
- FOR THE MEATBALLS
- 1 pound ground beef
- 1/2 pound ground pork
- 1/2 pound ground veal
- 1 tablespoon fresh ginger minced
- 4 cloves garlic minced
- 2 tablespoons lemongrass paste
- 2/3 cup bread crumbs
- 2 large eggs
- 2 tablespoons maggi sauce or soy sauce
- 2 tablespoons canola oil
- RED CURRY SAUCE
- 1/4 cup sake
- 3 tablespoons red curry paste
- 4 cloves garlic minced
- 8 ounces can tomato sauce
- 2 cups beef broth
- 1/3 cup brown sugar
- 1 can coconut cream
- 2 teaspoons sambal olek
- - salt to taste
- 2 tablespoons cornstarch with 3 tbsp water
- - jasmine rice for serving
- - scallions for garnish
How To Make red curry meatballs with jasmine rice

Step 1For the meatballs Mix all ingredient except oil together and shape into 1 inch balls. Add oil to large skillet. Brown the meatballs in batches then remove to a plate.

Step 2Deglaze the pan with the sake. Add the red curry paste and minced garlic. Stir to make a paste. Add the tomato sauce. Stir and cook 2 minutes. Add the beef stock. Cook 2 more minutes. Add the meatballs and any juices back to the pan. Bring to a boil. Stir in the coconut cream sambal olek and brown sugar. Taste and season with salt. Bring to a boil.

Step 3Stir the cornstarch together with water. Pour into the sauce and cook until thickened. Serve the meatballs and sauce over the rice and garnish with scallions.
