My facebook friend Susan from TN gave me this recipe and I make it often. I have never really measured the chili powder as that is a matter of taste so add more to less to suit your palate.

Ingredients

  • 1 1/2 lb
    ground beef
  • 1/2 c
    chopped green peppers
  • 1/2 c
    chopped onion
  • 1 can(s)
    yellow sweet corn, drained
  • 1 can(s)
    diced tomatoes with chilies,drained
  • 1 c
    sour cream
  • 1 Tbsp
    chili powder
  • 1 pkg
    cornbread mix
  • 8 oz
    shredded cheddar cheese

How to Make Railroad Pie

Step-by-Step

  1. In a large skillet, brown the ground beef, adding the peppers and onions. When done, drain, and return to skillet. Stir in the corn, tomatoes, sour cream, and chili powder. In another bowl prepare the cornbread mix following directions on the package.
  2. Pour beef mixture into a 9 x 13 inch baking dish. Spoon cornbread batter evenly over the top. Evenly spread the cheddar cheese over the batter and bake following the directions on the cornbread mix until cornbread is done and top is lightly brown.
