Ingredients

  • 1 pound lean ground beef
  • 1 can 14.5 oz can rotel tomatoes and green chilies
  • 1 can 11 oz can mexi-corn
  • 1 box 5.25 oz. box instant spanish rice mix (ready in 10 minutes)
  • 1 1/2 cups shredded mexican cheese blend
  • 1 1/2 cups water

How To Make quick one pot mexican beef & rice skillet

  • Step 1
    Brown the ground beef in a large skillet, breaking it apart to cook evenly. Drain beef on paper towels and then return to the skillet.
  • Step 2
    Add rotel, corn and rice mix along with 1 1/2 cups water.
  • Step 3
    Bring to a boil over medium-high heat; cover and reduce the heat to medium - cooking 3 minutes. Remove from heat and let stand, covered, for 8 minutes until rice is tender.
  • Step 4
    Sprinkle the cheese over the meat mixture and let stand until melted.
