Ingredients
- 1-2 pound lean hamburger
- 1 medium yellow onion (diced)
- 1 can corn and peppers (mexi mix)
- 1 can diced tomatoes & green chilies (rotel)
- 2 cups mexican blend shredded cheese
- 1 can black beans
- 1 box jiffy corn mix
How To Make quick mexican casserole

Step 1Brown the Lean Hamburger, salt and pepper to taste. Add the diced onion at end of browning to lightly cook the onion. If not using lean meat, drain off liquid.

Step 2Spray a small square baking dish lightly with cooking spray. Put in brown hamburger and remaining ingredients. Mix the Jiffy Mix according to the directions on the box. Pour the Jiffy Mix over the top of the mixture to cover. Bake according to the box mix so the cornbread mixture is browned.
