Quick Mexican Casserole
Tortilla chips on the side is great. Enjoy!
1-2 lblean hamburger
1 mediumyellow onion (diced)
1 can(s)corn and peppers (mexi mix)
1 can(s)diced tomatoes & green chilies (rotel)
2 cmexican blend shredded cheese
1 can(s)black beans
1 boxjiffy corn mix
How to Make Quick Mexican Casserole
- Brown the Lean Hamburger, salt and pepper to taste. Add the diced onion at end of browning to lightly cook the onion. If not using lean meat, drain off liquid.
- Spray a small square baking dish lightly with cooking spray. Put in brown hamburger and remaining ingredients. Mix the Jiffy Mix according to the directions on the box. Pour the Jiffy Mix over the top of the mixture to cover. Bake according to the box mix so the cornbread mixture is browned.
