Ingredients
- 2 2/3 cups instant mashed potatoes
- 1 1/2 cups sour cream
- 1 cup water
- 1 pound lean ground beef
- 3 tablespoons chopped onion or 1 t. dried minced onion
- 1 can (15oz) tomato sauce
- 1 can (12oz) mexican corn (undrained)in any veggie aisle
- 1 teaspoon salt
- 1/4-1/2 teaspoon pepper
- 1/8 teaspoon oregano
- 1/2 cup diced american or chedder cheese.(more if you like)

Step 1In a ungreased 9"x13" baking dish,blend potato flakes with sour cream and 1/2 cup of water. (mixture should be crumbly) If not add more potato flakes.

Step 2Pat firmly into bottom of pan. Brown beef(with onions,if using). Add dried onion(if not using fresh),remaining1/2 cup water,tomato sauce,corn,salt,pepper and oregano.

Step 3Spoon beef mixture over potatoes. Sprinkle with cheese. Bake 350 for 25-30 minutes.
