Ingredients

  • 1-2 tablespoon oil
  • 1 package 16-oz. pkg frozen stir fry veggies
  • 1 pound stir-fry ready beef strips
  • 3/4 cup beef stock (or broth)
  • 3/4 cup bottled peanut sauce
  • 2 packages 3-oz. pkgs. Ramen Noodles, broken (do not use spice packets)
  • 1/4 cup peanuts, chopped
  • 1/4 cup sliced scallions

How To Make quick & easy vegetable beef stir-fry

  • Step 1
    Using a wok or large skillet, heat the oil over medium-high heat. Add vegetables; saute for 5-6 minutes until cooked to your liking. Remove veggies from the skillet and set aside.
  • Step 2
    Separate beef into two batches and add additional oil (if needed). Saute the beef for 2-3 minutes (remove from skillet) and then add the remaining beef and cook until done. Return all beef and veggies to the skillet.
  • Step 3
    Mix together stock and peanut sauce and add to the skillet. Bring to a simmer and add broken noodles (do not use spice packets). Reduce the heat and cover pan -cook until noodles are tender; stirring occasionally. Garnish with chopped peanuts and sliced scallions if desired.
