Ingredients
- 1-2 tablespoon oil
- 1 package 16-oz. pkg frozen stir fry veggies
- 1 pound stir-fry ready beef strips
- 3/4 cup beef stock (or broth)
- 3/4 cup bottled peanut sauce
- 2 packages 3-oz. pkgs. Ramen Noodles, broken (do not use spice packets)
- 1/4 cup peanuts, chopped
- 1/4 cup sliced scallions
How To Make quick & easy vegetable beef stir-fry

Step 1Using a wok or large skillet, heat the oil over medium-high heat. Add vegetables; saute for 5-6 minutes until cooked to your liking. Remove veggies from the skillet and set aside.

Step 2Separate beef into two batches and add additional oil (if needed). Saute the beef for 2-3 minutes (remove from skillet) and then add the remaining beef and cook until done. Return all beef and veggies to the skillet.

Step 3Mix together stock and peanut sauce and add to the skillet. Bring to a simmer and add broken noodles (do not use spice packets). Reduce the heat and cover pan -cook until noodles are tender; stirring occasionally. Garnish with chopped peanuts and sliced scallions if desired.
