quick easy & meatball pasta bake

I made this with my own cooked and frozen meatballs. You can buy frozen meatballs or make them fresh as you prefer.

Ingredients

  • 2 cups penne, cooked - 1 cup pasta water reserved
  • 2 teaspoons olive oil
  • 1 medium onion, diced
  • 4 cups lightly packed baby greens of you choice
  • 1 cup tomato sauce
  • 1/2 cup light ricotta cheese
  • 16 - italian meatballs (just use italian seasoning to taste when making the balls)
  • 1/2 cup shredded mozzarella cheese
  • 2 tablespoons fresh basil (optional)

How To Make quick easy & meatball pasta bake

  • Step 1
    Preheat oven to 375°F (190°C). In a large non-stick skillet, heat oil over medium-high heat and cook onion until tender, about 5 min. Stir in the greens, remove from heat and keep covered until they are wilted, about 2 min.
  • Step 2
    Uncover and let cool completely. Stir in cooked pasta, reserved pasta water, tomato sauce, and ricotta. Transfer to an 8 x 8-in baking dish. Place meatballs evenly in the pasta mixture. Top with mozzarella.
  • Step 3
    Bake covered with foil 20 min. Uncover and bake for an additional 10 min., or until cheese is melted and bubbling. To serve, garnish with fresh basil (if using).
