quick easy & meatball pasta bake
I made this with my own cooked and frozen meatballs. You can buy frozen meatballs or make them fresh as you prefer.

Ingredients
- 2 cups penne, cooked - 1 cup pasta water reserved
- 2 teaspoons olive oil
- 1 medium onion, diced
- 4 cups lightly packed baby greens of you choice
- 1 cup tomato sauce
- 1/2 cup light ricotta cheese
- 16 - italian meatballs (just use italian seasoning to taste when making the balls)
- 1/2 cup shredded mozzarella cheese
- 2 tablespoons fresh basil (optional)

Step 1Preheat oven to 375°F (190°C). In a large non-stick skillet, heat oil over medium-high heat and cook onion until tender, about 5 min. Stir in the greens, remove from heat and keep covered until they are wilted, about 2 min.

Step 2Uncover and let cool completely. Stir in cooked pasta, reserved pasta water, tomato sauce, and ricotta. Transfer to an 8 x 8-in baking dish. Place meatballs evenly in the pasta mixture. Top with mozzarella.

Step 3Bake covered with foil 20 min. Uncover and bake for an additional 10 min., or until cheese is melted and bubbling. To serve, garnish with fresh basil (if using).
