Quick & Easy Crockpot Beef Stew

Wanted something to make with left-over roast beef & taters, so I came up with this recipe & it was a hit. The large cut veggies I buy are Veg-all Homestyle & have small dainty pearl onions in them which my honey loves! Hope yall will love it as much as we do. My 11 grands even love it!

Slow Cooker Crock Pot


1 can(s)
large can of large cut veggies
1 can(s)
small can tomato sauce
1 can(s)
standard size can of diced tomatoes
beef bouillon, cubes
1 can(s)
roast beef ~or ~ fresh beef stew meat
1 dash(es)
salt, pepper, paprika, parsley or other spices (optional)
2 Tbsp


1If you are using all canned ingredients (or leftover roast beef), just dump in all in the Crockpot, cook all day, and when you come home, supper is ready.
2If you are using fresh beef stew meat, pan brown it in a small amount of EVOO, maybe add a dash of soy sauce. Then add browned meat plus everything else into the crockpot & cook all day on low.
3I usually turn my crockpot on high for the first 30 minutes to an hour, then turn it down to low for the remaining time.
