quick & easy crockpot beef stew

Wanted something to make with left-over roast beef & taters, so I came up with this recipe & it was a hit. The large cut veggies I buy are Veg-all Homestyle & have small dainty pearl onions in them which my honey loves! Hope yall will love it as much as we do. My 11 grands even love it!

Ingredients

  • 1 can large can of large cut veggies
  • 1 can small can tomato sauce
  • 1 can standard size can of diced tomatoes
  • 1 - beef bouillon, cubes
  • 1 can roast beef ~or ~ fresh beef stew meat
  • 1 dash salt, pepper, paprika, parsley or other spices (optional)
  • 2 tablespoons butter

How To Make quick & easy crockpot beef stew

  • Step 1
    If you are using all canned ingredients (or leftover roast beef), just dump in all in the Crockpot, cook all day, and when you come home, supper is ready.
  • Step 2
    If you are using fresh beef stew meat, pan brown it in a small amount of EVOO, maybe add a dash of soy sauce. Then add browned meat plus everything else into the crockpot & cook all day on low.
  • Step 3
    I usually turn my crockpot on high for the first 30 minutes to an hour, then turn it down to low for the remaining time.
