I got this note from my niece Stephanie requesting a recipe: "One recipe my Mom did as a kid which was probably just a quick, cheap meal, but I still have fond memories of it, and haven’t had it for 20 years. It was ground hamburger with mixed vegetables and gravy, and topped with biscuits. I don’t know what Mom used for the gravy, but I remember it as comfort food."

I thought she was talking about shepherd's pie, but when I spoke with Susan, this is the recipe she gave me!

Who knew? LOL

hamburger
to taste
salt and pepper
2 can(s)
vegetable beef soup
1 can(s)
frozen biscuits

How to Make Quick Beef Dumpling Dinner

Step-by-Step

  • 1In a large skillet, crumble, season, and fry the hamburger until nicely browned
  • 2In same pan, dump in the soup from the can (do not add water).
  • 3When the soup is bubbly, place individual biscuits on top and put a lid on the pan.
  • 4Let it simmer until the biscuit dumplings are done, about 10-15 minutes. Enjoy!
