Super easy, super delicious, this has been a staple at my house for 20+ years!

Ingredients

  • 1-2 pound ground beef
  • 1/2-1 cup chopped onion
  • 1 clove garlic, chopped
  • 1 can mixed vegetables
  • 1 can corn kernels
  • 1 (28 oz) can tomato puree
  • 1 can chopped tomatoes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 tablespoons worcestershire sauce
  • 1 1/2 cups cooked barley (can use instant) -or-
  • 2 cups cooked small pasta, such as alphabets, ditalini, etc.

How To Make quick and easy vegetable beef soup

  • Step 1
    Crumble ground beef into dutch oven and cook, along with chopped onion, on medium high until ground beef is browned and onion is wilted. Stir in chopped garlic about 1-2 minutes before browning is complete.
  • Step 2
    Add remaining ingredients. Stir to mix thouroughly. Raise heat to high, until mixture comes to a boil. Reduce heat to low and simmer 1/2 to 1 hour, adding water if needed. Enjoy!
