Ingredients

1-2 lbground beef
-
1/2-1 cchopped onion
-
1 clovegarlic, chopped
-
1 can(s)mixed vegetables
-
1 can(s)corn kernels
-
1 (28 oz) can(s)tomato puree
-
1 can(s)chopped tomatoes
-
1/2 tspsalt
-
1/4 tspblack pepper
-
1 1/2 Tbspworcestershire sauce
-
1 1/2 ccooked barley (can use instant) -or-
-
2 ccooked small pasta, such as alphabets, ditalini, etc.
How to Make Quick and Easy Vegetable Beef Soup
- Crumble ground beef into dutch oven and cook, along with chopped onion, on medium high until ground beef is browned and onion is wilted. Stir in chopped garlic about 1-2 minutes before browning is complete.
- Add remaining ingredients. Stir to mix thouroughly. Raise heat to high, until mixture comes to a boil. Reduce heat to low and simmer 1/2 to 1 hour, adding water if needed. Enjoy!
