Ingredients

  • 1-2 lb
    ground beef
  • 1/2-1 c
    chopped onion
  • 1 clove
    garlic, chopped
  • 1 can(s)
    mixed vegetables
  • 1 can(s)
    corn kernels
  • 1 (28 oz) can(s)
    tomato puree
  • 1 can(s)
    chopped tomatoes
  • 1/2 tsp
    salt
  • 1/4 tsp
    black pepper
  • 1 1/2 Tbsp
    worcestershire sauce
  • 1 1/2 c
    cooked barley (can use instant) -or-
  • 2 c
    cooked small pasta, such as alphabets, ditalini, etc.

How to Make Quick and Easy Vegetable Beef Soup

Step-by-Step

  1. Crumble ground beef into dutch oven and cook, along with chopped onion, on medium high until ground beef is browned and onion is wilted. Stir in chopped garlic about 1-2 minutes before browning is complete.
  2. Add remaining ingredients. Stir to mix thouroughly. Raise heat to high, until mixture comes to a boil. Reduce heat to low and simmer 1/2 to 1 hour, adding water if needed. Enjoy!
