I enjoy food. And when you have an opportunity to make it your own, why not? This is a recipe I had but I changed it up to where it was better.

Ingredients
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon minced garlic
- 1/2 teaspoon oregano, dried
- 1/2 teaspoon crushed red pepper (optional)
- 1 pound ground beef
- 1/2 cup chopped onion
- 1 can 14.5 oz peeled tomatoes diced (undrained)
- 1 can 4 oz diced green chiles (undrained)
- 1 can 16 oz refried beans
- 1 cup whole kernel corn
- 6 - flour tortillas (8 in)
- 2 cups shredded cheddar cheese
- - sour cream for garnish
How To Make quesadilla casserole

Step 1Brown beef and onions in large skillet on Med-high heat; drain. Add tomatoes, corn, and chiles; mix well. Stir in all of the spices except Red Pepper. Bring to boil. Reduce heat to low; simmer 10 minutes till all the liquid is gone. Add Red pepper to taste, if desired.

Step 2Spread 1/2 cup of the beef mixture on bottom of 13x9x2 in. baking dish sprayed with no-stick cooking spray. Take 3 tortillas, spread refried beans on each and overlapping, lay over the beef mixture. Layer with 1/2 of the remaining beef and 1/2 the cheese. Repeat with remaining tortillas, beef mixture and cheese.

Step 3Bake in preheated 350°f oven 15 minutes or until heated through. Let stand 5 minutes before serving. Top each serving with a dollop of sour cream.
