New 'kid on the block' at my house! Really quick cook for after work, so tasty!

Ingredients

  • 1 1/2 pounds fresh green onion sausage
  • 1 - medium onion, chopped
  • 2 cloves garlic, chopped
  • 15 ounces can tomato sauce
  • 15 ounces can black beans, drained
  • 14 1/2 ounces can diced tomatoes with lime/cilantro
  • 8,75 ounces can whole kernel sweet corn
  • 4 ounces can green chilis, drained
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 6 - flour tortillas
  • 2 cups shredded cheddar cheese

How To Make quesadilla casserole

  • Step 1
    Preheat oven to 350. Prepare a 13 x 9 baking dish with cooking spray.
  • Step 2
    Cook beef in onion until cooked through. Drain grease and add the onion and garlic and saute 5 minutes longer.
  • Step 3
    Stir in the next 5 ingredients then season with the seasonings, simmer 10 minutes.
  • Step 4
    Spread 1 cup of mixture on bottom in pan and top with 2 tortillas. Spread 1 cup of meat mixture and some cheese. Layer another 2 tortillas, 1 cup meat mixture and cheese. Place third layer, ending with cheese.
  • Step 5
    Bake in heated oven until heated through and cheese is melted. Cool slightly before serving. Serve with sour cream and avocado slices!
