fresh green onion sausage
medium onion, chopped
2 clove
garlic, chopped
15 oz
can tomato sauce
15 oz
can black beans, drained
14 1/2 oz
can diced tomatoes with lime/cilantro
8,75 oz
can whole kernel sweet corn
4 oz
can green chilis, drained
2 tsp
chili powder
1 tsp
ground cumin
1 tsp
garlic powder
1/2 tsp
dried oregano
1/2 tsp
red pepper flakes
flour tortillas
2 c
shredded cheddar cheese

How to Make Quesadilla Casserole


  • 1Preheat oven to 350. Prepare a 13 x 9 baking dish with cooking spray.
  • 2Cook beef in onion until cooked through. Drain grease and add the onion and garlic and saute 5 minutes longer.
  • 3Stir in the next 5 ingredients then season with the seasonings, simmer 10 minutes.
  • 4Spread 1 cup of mixture on bottom in pan and top with 2 tortillas. Spread 1 cup of meat mixture and some cheese. Layer another 2 tortillas, 1 cup meat mixture and cheese. Place third layer, ending with cheese.
  • 5Bake in heated oven until heated through and cheese is melted. Cool slightly before serving. Serve with sour cream and avocado slices!
