Ingredients
- 1 1/2 pounds fresh green onion sausage
- 1 - medium onion, chopped
- 2 cloves garlic, chopped
- 15 ounces can tomato sauce
- 15 ounces can black beans, drained
- 14 1/2 ounces can diced tomatoes with lime/cilantro
- 8,75 ounces can whole kernel sweet corn
- 4 ounces can green chilis, drained
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- 6 - flour tortillas
- 2 cups shredded cheddar cheese
How To Make quesadilla casserole

Step 1Preheat oven to 350. Prepare a 13 x 9 baking dish with cooking spray.

Step 2Cook beef in onion until cooked through. Drain grease and add the onion and garlic and saute 5 minutes longer.

Step 3Stir in the next 5 ingredients then season with the seasonings, simmer 10 minutes.

Step 4Spread 1 cup of mixture on bottom in pan and top with 2 tortillas. Spread 1 cup of meat mixture and some cheese. Layer another 2 tortillas, 1 cup meat mixture and cheese. Place third layer, ending with cheese.

Step 5Bake in heated oven until heated through and cheese is melted. Cool slightly before serving. Serve with sour cream and avocado slices!
