puertorican beef stew (sancocho)
This a stew that we make in Puerto Rico for the winter, but we make it anytime now, You can have it with rice, or by itself. My family loves it, they like it alone with bread. You make it and see how you like it, and with what.

Ingredients
- FOR THE MEAT (PARA LA CARNE):
- 1 slice ham (jamon)
- 1 slice ham bone (hueso de jamon)
- 11/2 pounds beef (de carne de res)
- 1 tablespoon seasoning (sazon)
- 1/2 onion (cebolla)
- 1 green pepper (pimiento verde)
- 1 stalk celery (tallo de apio)
- 4 leeks sliced round 1/2 inch (rodajas de puerro)
- 3 sweet chile (ají dulce)
- 1 tomato (tomate)
- 3 cloves garlic cloves (dientes de ajo)
- 1 tablespoon oil (aceite)
- 1 tablespoon concentrated chicken broth (concentrado de pollo)
- 1/2 cilantro bundle (cilantro)
- 1 oregano branch (rama de oregano)
- 2 culantro leaves (hojas de recao)
- 4 cups water (agua)
- FOR THE VEGETABLES (PARA LAS VERDURAS):
- 6 green bananas (guineos verdes)
- 1 carrots (zanahoria)
- 1/2 pumpkin (calabaza)
- 2 medium potatoes (papas)
- 1 large white yautia (yautia blanca)
- 1 large cassava (yucca)
- 1 large yam (ñame
- 1 large sweet potato (batata)
- 1 large taro (malanga)
- 2 corn on the cob ( maíz en la mazorca)
- 2 tablespoons oil (aceite)
- 1 cup ham (jamon)
- 1 chicken breast (pechuga de pollo)
- 4 tablespoons creole sofrito ( sofrito criollo)
- 4 tablespoons minced garlic ( ajo molido)
- 1 tablespoon concentrated chicken broth (concentrado de pollo)
- 1 cup tomato sauce (salsa de tomate)

Step 1For the meat (Para la carne):

Step 2In a pot or a pressure cooker put everything in the pot for the meat excepted the ham, make sure the water covers the meat. (En una olla o olla a presión poner todo lo que hay en la olla para la carne menos el jamón, asegurarse de que el agua cubra la carne.)

Step 3Once you got everything in the pot put the cover on the pot. (Una vez que hayas metido todo en la olla, ponle la tapa a la olla.)

Step 4Put the pot on the stove on high heat, until it is boiling. (Ponga la olla en la estufa a fuego alto, hasta que esté hirviendo.)

Step 5Once it is boiling put it on medium heat for 30 mins. (Una vez que esté hirviendo, ponlo a fuego medio durante 30 minutos.)

Step 6After 30 mins take it off the heat and let it start cooling down for about 15-20 mins. (Después de 30 minutos, retíralo del fuego y deje que comience a enfriarse durante unos 15-20 minutos.)

Step 7After it has cool down, I take the meat out and reserve the rest for the Beef Stew. (Después de que se haya enfriado, saco la carne y reservar el resto para el Sancocho.)

Step 8While the meat is cooking, you start working on the vegetables. (Mientras se cocina la carne, empiezas a trabajar en las verduras.)

Step 9For The Vegetables (Para las verduras)

Step 10Add the 2 tbsps of oil, the ham and the chicken breast in a pot and stir fry the meats in the oil. (Agregue las 2 cucharadas de aceite, el jamón y la pechuga de pollo en una olla y saltee las carnes en el aceite.)

Step 11Cook for 4 mins. (Cocine por 4 minutos.)

Step 12Add 7 to 10 pieces of corn on the cob, 11/2 sweet potato, 11/2 cups of carrots. (Agregue de 7 a 10 piezas de mazorcas de maíz, 1 1/2 camote, 1 1/2 tazas de zanahorias.)

Step 13Add 6 cups the broth from the meat and 4 cups of water. (Agrega 6 tazas del caldo de la carne y 4 tazas de agua.)

Step 16Cook for 12 mins. (Cocine por 12 minutos.)

Step 17Add the 4 green bananas, 11/2 cups potato, 11/2 cups yam, 11/2 cups pumpkin. (Agregue los 4 plátanos verdes, 11/2 tazas de papa, 11/2 tazas de ñame, 11/2 tazas de calabaza.)

Step 18Cook for 20 mins. (Cocine por 20 minutos.)

Step 19Add the cooked meat. (Añadir la carne cocida.)

Step 20Add 2 tbsp salt to taste. (Agregue 2 cucharadas de sal al gusto.)

Step 21Add 1/2 cup red pepper, 4 culantro leaves, 1/2 cup cilantro bundle. (Agrega 1/2 taza de pimiento rojo, 4 hojas de culantro, 1/2 taza de manojo de cilantro.)
